Deze Barbazzale Sicilia Bianco van Cottanera heeft aroma’s van grapefruit, rijpe perzik, abrikoos, kruiden en bloemen. In de afdronk frisse zuren en een licht amandelbitter. De structuur maakt de wijn uitermate geschikt bij stevige visgerechten, gegrilde groenten en gevogelte.
Guglielmo begon met Internationale druivenrassen en besloot na een aantal jaren verder te gaan met lokale druivenrassen. Op dit moment omvat het bedrijf 100 hectare waarvan 65 hectare is aangeplant. De druivenstokken hebben een noordelijke oriëntatie en groeien op lavagesteente, ongeveer 700 meter boven zeepijl. De Barbazzale Bianco wordt grotendeels gemaakt van catarratto en een klein percentage viognier. De wijngaarden van Contrada Cottanera liggen in Castiglione di Sicilia op 720 meter hoogte en de druivenstokken zijn gemiddeld 15 jaar oud. Na de oogst worden de druiven gekneusd en wordt het sap een aantal uur ingeweekt. De alcoholische fermentatie vindt plaats in roestvrijstalen tanks op 16°C. De wijn rust na afloop nog 3 maanden op zijn afgestorven gistcellen.
