Deze Blanc de Blancs Grand Cru Champagne heeft primaire van aroma's van citrus, limoen en witte bloesem met wat toast en amandel. In de smaak citrus met wit fruit en fijne minerale tonen. In de afdronk creamy en levendig. Heerlijk als aperitief of bij oesters en schaal- en schelpdieren.
Bruno Paillard was 27 toen hij zijn eigen wijnhuis oprichtte. Zijn stijl wordt gekenmerkt door de klassieke assemblages van verschillende druivenrassen en verschillende jaargangen. Hij bezit op het moment 32 hectare wijngaarden, waarvan 12 hectare Grand Cru geclassificeerd zijn. De druiven voor de Blanc de Blancs Grand Cru zijn alleen afkomstig van de grand cru wijngaarden. Deze champagne bestaat voor 100% uit chardonnay. De druiven worden handmatig geplukt en alleen het sap van de eerste persing wordt gebruikt. Het sap ondergaat een alcoholische fermentatie in roestvrijstalen tanks en in eikenhouten vaten (20%). Na de tweede alcoholische gisting in de fles rust de champagne 4 jaar in de kelder op zijn afgestorven gistcellen. Na de dégorgement ontwikkelt de champagne zich nog 10 maanden op fles.
