100% Pinot Noir, ‘Blanc de Noirs’
Geurige Champagne met aroma’s van gedroogd fruit, pruim, met ook kruidige aroma’s. In de mond proef je zwarte bes, kalk en wat aardse tonen. De wijn heeft subtiele aroma’s van de houten vaten, waarin de wijn heeft gerijpt. De bubbels zijn zeer fijn, de afdronk is hartig en zeer lang.
De druiven worden met de hand geoogst en binnen 4 uur geperst. Eerste fermentatie vindt plaats in oude houten vaten. Vervolgens rijping op de lie met regelmatig bâtonnage, oftewel, het omroeren van de lie. De tweede fermentatie vindt op de fles plaats, en rijpt vervolgens minimaal 6 jaar op de fles verder. Dosage is slechts 2 g/l (extra brut).
