100% chardonnay, ‘Blanc de Blancs’
Zwoele neus van rijpe steenvruchten, met noten van vanille, boter en kruidige(specerijen) aroma’s. Het mondgevoel is zacht en uitnodigend, het rijpe fruit is mooi in balans met lichte zuren. De wijn heeft subtiele aroma’s van de houten vaten, waarin de wijn heeft gerijpt. De bubbels zijn zeer fijn, de afdronk is zacht en lang.
De druiven worden met de hand geoogst en binnen 4 uur geperst. Eerste vergisting vindt voor 50% plaats in oude houten vaten. Vervolgens 7 maanden rijping op de lie met regelmatig bâtonnage, oftewel, het omroeren van de lie. Volledige malolactische vergisting. De tweede vergisting en rijping in de fles is minimaal 6 jaar. De dosage is 6 g/l.
