Wat is Agar-Agar?
Agar-Agar komt uit het Maleis en betekent gelei. Agar-Agar is een vegan geleermiddel, een gelatine-achtige stof op basis van zeewier. Agar Agar heeft een 4x zo sterkere bindkracht als gewone gelatine.
Hiermee maak je bijvoorbeeld puddings, taartvullingen, decoraties enz. De poedervorm is het eenvoudigst in het gebruik omdat het makkelijker oplost in vloeistoffen. Je hebt er dus aanzienlijk minder van nodig. Voor een liter vloeistof wordt ongeveer 10 blaadjes gelatine gebruikt en dat zou je kunnen vervangen door 1 zak geconcentreerd poeder of 8 gram agar-agar in reep- of vlokken-vorm. De benodigde hoeveelheid agar-agar los je op in de vloeistof door het 5 tot 8 minuten heel zachtjes te laten koken onder goed roeren. Alle agar-agar moet zijn opgelost omdat zich anders klontjes gaan vormen. In sommige gevallen kan het handiger zijn om de agar-agar eerst op te lossen in bijvoorbeeld warm water. Zachtjes koken is echt noodzakelijk. Bij te weinig verwarmen, verliest agar-agar sneller z`n bindkracht en hetzelfde gebeurt als je te hard kookt.
