Van Dongé kaasmakers komt een Brie de Meaux van de hoogste orde. De populariteit van de Brie de Meaux had/heeft het in eerste instantie natuurlijk te danken aan zijn smaak, echter de aanwezigheid van Parijs op een steenworp afstand van het productiegebied maakte dat een zeer groot publiek de kaas omarmd(e). De verkiezing door Napoleon in 1814 tot “Le Roi des Fromages”: de Koning der Kazen, maakte dat ook buiten de landsgrenzen men brie de Meaux ging eten. De wrongel wordt nauwelijks gesneden maar een soort van gestapeld, de zwaartekracht zorgt voor de het afdrijven van de wei, zouten gebeurd met de hand, het blijft een feest om deze kaas te verkopen.
Wij hebben zelf een heerlijke truffelpasta toegevoegd aan deze kaas en hem zo omgetoverd tot heerlijke kerst specialiteit
