Description
"Clarete" is what Goyo terms as a style of short maceration winemaking. Fresher than his other reds, yet still appropriately brawn. Finca Los Quemados Clarete is 100% Tinta Fina (Tempranillo) from the Los Quemados vineyard. The 56-year-old vines are planted on red sands with pebbles, 960m above sea level, making for one of the highest vineyards in Ribera del Duero. Grapes are destemmed and macerated in stainless steel tanks for 5-6 days. As fermentation begins, the juice is racked off into old French oak barrels to ferment. Bottled without the addition of SO2 and without fining or filtering. This a fantastic example of dynamic and refined zero/zero winemaking.
