Doe de gewenste hoeveelheid gedroogde porcini in een hittebestendige schaal. 10 - 20 gram gedroogde paddestoelen staan gelijk aan 100-200 gram verse. Giet per 10 gram gedroogde porcini minstens 100 ml kokend water in de schaal. Het wellen duurt ongeveer 30-60 minuten. Als de gewelde paddestoelen voor het verdere proces nog gekookt moeten worden, is 15 minuten voldoende.
