Deze gefermenteerde kool wordt gemaakt door Kramer en Zonen. Bij dit familiebedrijf wordt al vijf generaties kool verwerkt van eigen land. Kramer krijgt witte kool binnen, wat ze verwerken tot koolsliertjes. Hierna begint het inmaakproces. De kool wordt van augustus tot december opgeslagen in diepe putten, waar natuurlijke fermentatie plaatsvindt. Wanneer de gefermenteerde witte kool is veranderd in zuurkool, wordt het direct vers verpakt. Reguliere zuurkool in blok of glazen pot wordt gepasteuriseerd. De zuurkool van Kramer wordt niet verhit, waardoor je echte zuurkool krijgt. Hiermee heb je een heerlijke basis voor een koolstamppot, of als bijgerecht.
