Met veelvuldige teeltwisselingen en voedzame mest van eigen vee zorgen Demeterboeren voor een rijk en gevarieerd bodemleven in de volle grond. Kruidenrijke zomen rondom de Franse en Italiaanse akkers trekken insecten aan die de groei en bloei van de bruine linzen helpen bevorderen. Demeterboeren zijn de ware rentmeesters van onze aarde: ze gebruiken biodiversiteit in plaats van die te bestrijden.
