Description
De Morbier is een halfharde kaas, afkomstig uit het gelijknamige Franse dorpje Morbier in de Jura. De kaas wordt gemaakt van rauwe koemelk en heeft een aangename, licht pikante smaak. Morbier is herkenbaar aan het laagje as in de kaas. Vroeger diende dit laagje as ter bescherming van de avondwrongel, waar de volgende dag de ochtendwrongel overheen werd gegoten. Tegenwoordig is het laagje as nog vooral een karakteristiek kenmerk van de kaas. Morbier draagt een AOC-keurmerk, wat inhoudt dat de kaas volgens strenge eisen in dit specifieke gebied bereid wordt. Morbier rijpt drie tot vier maanden en wordt in deze tijd drie keer per week gewassen in pekelwater. Dit zorgt voor een natuurlijke korst en de aangename smaak van de kaas. Morbier is erg geschikt voor gebruik op een kaasplankje, in combinatie met een goede rode wijn.
