Pastinaak is tegenwoordig geen vergeten groente meer. De smaak van deze lange, ivoorkleurige wortel is zoetig, bijna anijsachtig en ligt tussen de smaak van wortel en knolselderij in. Pastinaak is veelzijdig: je kunt m rauw, gegrilld en gekookt eten. Bijvoorbeeld geraspt door de salade, in plakjes geschaafd en gefrituurd als chips of gewoon in blokjes meestoven met bijvoorbeeld pompoen en wortel. Bak je de pastinaak lekker krokant in de oven, dan komt de zoete smaak nog beter tot zijn recht.
