Ze is onze kampioen! degene die de Epicure d'Or 2021 won. Deze sardines hebben hun volwassen grootte bereikt en worden in de winter gevangen met ringzegen (bij de kust) in Frankrijk in de Golf van Biskaje. Ze zijn groter en minder vet dan de sardines die men gewoonlijk aantreft. De sardines worden met de hand bereid volgens de oudste methode uit 1804 (uit de tijd van de "Penn Sardin"): ze worden eerst gezouten en vervolgens 3 dagen gedroogd voordat ze met de hand rauw in een verrine worden gedaan. . Zo behouden ze al hun smaak. Ze zijn niet gefrituurd, waardoor ze beter verteerbaar zijn. De biologische olijfolie komt van een kleine molen in Navarra, ten zuiden van Pamplona. Het wordt bereid met olijven van de variëteit Empeltre. Sardines, biologische extra vergine olijfolie, een snufje zout en klaar! Geen toevoegingen, kleurstoffen of andere perlimpinpin! Een pot van 320 g staat gelijk aan ongeveer 3 klassieke blikken. Het kan worden gesloten en is na opening 1 maand houdbaar in de koelkast.
