Maïs komt oorspronkelijk uit Amerika. De suikermaïs is een jonge consumptiemaïs, waarvan de suiker in de korrels nog niet is omgezet in zetmeel. Verse kolven zijn enkele dagen in de koelkast te bewaren. Verwijder vóór het koken de schutbladeren en draden. Kook de maïs niet te lang. Hoe langer gekookt, hoe taaier de korrels. Vijf minuten koken en nog tien minuten in het water laten nagaren werkt beter dan 10 minuten koken. Ook geen zout gebruiken tijdens het koken komt de sappigheid ten goede. Vlak voor het opdienen de kolven met roomboter bestrijken, licht met zout bestrooien en de korrels van de kolf afbijten.
