Van nature bevat koemelk eiwit, waarvan 82% caseïne. Vroeger bevatte alle koemelk betacaseïne A2, de zogeheten oermelk. Maar eeuwen geleden vond door migratie en domesticering een mutatie bij de Europese koeienrassen plaats. Daarmee veranderde ook de genetische samenstelling van de bètacaseïne. Deze nieuwe variant van bètacaseïne is bekend als het eiwit A1-bètacaseïne. Weerribben Zuivel A2 melk is afkomstig van speciaal geselecteerde koeien, die uitsluitend melk leveren met betacaseïne A2. Deze melk is heel goed verteerbaar, maar niet geschikt voor mensen waarbij de diagnose is gesteld van lactose- intolerantie of melkallergie.Informatie met betrekking tot allergieën en speciale diëten
