Vieux Carré Absinthe is begonnen in 2005 en wordt geproduceerd in Philadelphia in de Verenigde Staten. Het was de eerste Absint die legaal gedestilleerd, gebotteld en verkocht werd aan de Oostkust van de Verenigde Staten in bijna 100 jaar tijd. De absint is dubbel geïnfuseerd met onder andere wormwood, anijs, venkel en munt. Dit geeft een mooi complex smaakprofiel aan Vieux Carré.
