Tot de Franse revolutie waren de brouwers in de abdij altijd "gewone" mensen die betaald werden voor hun werk. Daarna begonnen de paters zelf hun bier te brouwen. Tijdens de Eerste Wereldoorlog eisten de Duitsers de koperen bierketels op en moest de brouwerij haar deuren sluiten. Maar in 1920 werden nieuwe ketels in gebruik genomen. In 1970 kreeg de huidige Brouwerij Affligem de opdracht om het abdijbier te brouwen volgens de Formula Antiqua Renovata. Daarbij wordt gebruik gemaakt van moderne materialen maar met veel respect voor de authentieke receptuur. Zo is de bierdrinker er zeker van dat de traditionele smaak van Affligem behouden blijft. Het tweede authentieke abdijbier van Affligem is de Dubbel.
