De bittermeloen kan voor consumptie bitter zijn om er in de keuken mee aan de slag te gaan, echter daar kan veel aan gedaan worden, maar de effecten die het heeft op de gezondheid zijn uniek.
Het is een ontzettend gezonde groente die boordevol zit met vitaminen en mineralen: vitamine B1, B2, B3, B11 en vitamine C, magnesium, fosfor, ijzer, mangaan en zink. De bittermeloen bevat twee keer zoveel betacaroteen als broccoli, tweemaal zoveel calcium als spinazie en tweemaal zoveel kalium als een banaan.
Wetenschappelijk onderzoek richt zich vooral op de werking van de bittermeloen op diabetes, microbiele infecties, maagzweren en zijn antikankerwerking. Ook heeft de bittermeloen een antivirale en antibacteriële werking. Bittermeloenextract versneld het helingsproces van maagzweren en verhindert de ontwikkeling van maagzweren.
