Comté is de meest gegeten kaas van Frankrijk. Niet zo gek want het is een echte allemansvriend met een zoete, nootachtige smaak en een aangenaam, romig karakter. Locatelli is zoals gebruikelijk in de Alpen regio niet de producent maar de affineur. De rol van affineur (of op zijn Hollands 'rijper') is veel belangrijker. Zij geven door de juiste behandeling en temperatuur, elke kaas, zijn geheel eigen karakter. Let op: deze kaas is gemaakt van rauwe melk en daarom niet geschikt voor zwangere vrouwen.
