Deze Crémant de Limoux van Domaine de Mouscaillo heeft een lichte kleur en rijke aroma's van citrus, witte perzik en honing. In de smaak fris, wit fruit, citrus en een frisse, schone afdronk. De frisse, droge stijl maakt deze Crémant uiterst geschikt als aperitief maar is ook goed te combineren met charcuterie of met schaal- en schelpdieren zoals oesters.
Deze Crémant de Limoux wordt volgens de klassieke methode gevinifieerd van de chardonnay, pinor noir en chenin blanc druiven. Deze worden na de oogst licht geperst en alleen het eerst sap wordt gebruikt voor de Crémant. Na de persing ondergaat het sap de eerste alcoholische fermentatie op demi-muids en rijpt vervolgens nog 9 maanden 'sur lie'. Na botteling rijpt de wijn nog eens 18 maanden op fles en ondergaat een tweede gisting op fles. Na de degorgement wordt er geen dosage toegevoegd.
