Description
De druiven worden met de hand geoogst wanneer ze perfect rijp zijn en afzonderlijk gevinifieerd om de karaktereigenschappen van elke variëteit het best tot uiting te laten komen. Na een zachte en voorzichtige persing ondergaan de druiven gedurende 12 uur een koude maceratie en worden ze onmiddellijk daarna geperst. Pecorino fermenteert in grote, ongeroosterde vaten van 50hl, Fiano en Grillo fermenteren in roestvrijstalen vaten.
Biedt een complex boeket met tonen van exotisch fruit zoals mango, papaja, limoen en rode grapefruit gecombineerd met geuren van kruiden zoals citroengras, citroenmelisse, munt en groene thee.
Wijn/spijs
Perfect als aperitief in combinatie met ham en kaas, delicate soepen, crudité van schaaldieren en alle soorten witvis.
