Elegast makes Perry mainly from stewed pears. Hard and inedible on their own, they become soft in taste and floral in smell when fermented. The naturally present unfermentable sugars keep this Perry slightly sweet and therefore very accessible. Elegast makes artisanal cider from apples from Dutch standard orchards. They make a natural cider from pure juice. Elegast harvests itself, presses itself, and through slow fermentation in the winter months, it achieves a unique complexity in taste.
