Deze Emilio Valerio is een wijn met aroma’s en smaaktonen van bosaardbeien, zwarte bessen, bramen en kruiden. Heerlijk bij diverse gerechten met bijvoorbeeld kalfsvlees, lamsvlees of Spaanse ham.
Op de kalksteenrijke hellingen van het Montejurra gebergte, rond het dorpje Dicastillo, groeien de druiven voor Laderas de Montejurra. Laderas de Montejurra is opgericht door een aantal families. De wijngaarden bevinden zich op 400-650 meter hoogte op rotsachtige en arme grond in het Montejurra gebergte. De wijngaarden zijn verspreid over 25 hectare die toebehoren aan 15 verschillende families. Biodynamische landbouwmethoden staan hoog in het vaandel. Deze Emilio Valerio bestaat uit een blend van garnacha (33%), cabernet sauvignon (33%) en merlot (33%). De druiven zijn afkomstig van talloze kleine wijngaarden op verschillende hoogtes en van verschillende grondsoorten. Afhankelijk van de druivenrassen worden verschillende technieken toegepast. De wijn rijpt op zijn lie in Franse eikenhouten vaten en wordt gebotteld na een zeer lichte klaring en filtratie.
