Aged for about 6 months on French oak. Fortified with pure alcohol distilled from the wine itself. Spontaneous fermentation. No additives except for the pure alcohol and a minimum level of added sulfites.

For this wine we used 100% garnacha grapes grown by our partner Roger Grifoll Declara in Priorat, Spain.
Priorat is a mecca of the wine world. Thanks to its volcanic history, Priorat is built on rough and rocky ground, which offers many nutritions for growing grape vines, but is - well - a pain in the butt when it comes to harvesting grapes. That’s why Prioratians grow terrace shaped vineyards, you know, like tea in Indonesia. Our favourite Prioratian is Roger Grifoll Declara, our partner farmer who grows the garnacha grapes in this fortified wine. He’s had experience in wineries all over the world and as if that didn’t make him the perfect partner already: he’s a dog person as well.
Garnacha - not to be confused with its French brother grenache - is a heavy red grape, which found its origins in Spain but is being grown nowadays pretty much everywhere. We get our garnacha from good ol’ Priorat because it's a classic, robust region which can help create some very powerful wines.
This is a low-intervention wine using spontaneous fermentation on indigenous yeast (naturally present in the grapes) and no filtering of the wine. It was made by our founding winemaker.
This wine lived a life of its own. After pressing the grapes the juice decided to stop fermenting early - too early, in fact. Our founding winemaker Jos made the decision to let it rest, to wait and see. All of a sudden, the juice started fermenting once more, but now it went too fast and we ended up with a very high alcohol percentage. Much too high for a normal wine. How to solve this? We sent a part of the wine to a distillery, who turned it into pure alcohol. Then we added the alcohol back into the wine, to make our first ever port-styled product. A Chateau Amsterdam first!
This one is best enjoyed as a digestive or with dessert, and it's best served chilled.
