Description
Kokkels worden ook wel hartschelpen genoemd. En worden handmatig geraapt in de Waddenzee. Dit gebeurd bij laag water. En wordt gedaan met behulp van zogenaamde handbeugels.
Verse kokkels zijn eenvoudig te bereiden en zijn bijvoorbeeld gekookt een heerlijk onderdeel van een plateau Fruits de Mer. Daarnaast zijn kokkels lekker als tapa of verwerkt in een paella, maar ook als ingrediënt in soepen of andere bereidingen. Na de kokkels anderhalve minuut te hebben gekookt in een bouillon zijn ze open en klaar voor consumptie.
