De oogst is in november, waarna de druiven voorzichtig worden gekneusd waarbij de schillen enkele uren meegisten. De temperatuur wordt tijdens de gisting zeer laag gehouden, waardoor de wijn langzaam rijpt en het fruit tot volle expressie komt.
Door de late oogst is deze wijn mineralig, complex en rijk. Een Qualitätswijn met klasse.
Te serveren bij varkens- en wildzwijn gebraad, zuurkoolschotels, Oosterse gerechten en rijpe roodbacterie kazen. De wijn is nu op dronk maar kan moeiteloos 20 jaar bewaard worden.
