De druiven voor deze wijn komen van de koelste percelen in Zuid-Frankrijk, in de buurt van Limoux tegen de voet van de Pyreneeën aan. De grond is hier arm, zodat wát geoogst wordt over een maximale aromatische concentratie beschikt. Daar komt bij dat de hoge ligging van de gaarden een langzame rijping van de trossen garandeert en dat zorgt weer voor prachtige zuren en kwalitatief mooie tannines.
Vol en rond met een pittige bessensmaak en zwoele kersen. De structuur is buitengewoon soepel. Te serveren als aperitief, bij lichte vleesgerechten of bij Camembert of andere witschimmelkazen.
