De Saperavi-druiven waarvan deze wijn wordt gemaakt, worden handmatig geplukt als deze volledig gerijpt zijn.
Blaadjes en steeltjes worden zorgvuldig verwijderd en de druiven worden voorzichtig gekneusd. Twee dagen blijven de schilletjes in het sap, zodat de smaakt hiervan goed kan intrekken, waarna deze worden verwijderd.
De vergisting gebeurt in roestvrij stalen tanks, op een gecontroleerde temperatuur tussen de 25 en 28° C. Het totale proces wordt afgerond door de most acht maanden te laten rijpen in kleine eikenhouten Franse vaatjes, wat gevolgd wordt door rijping op fles, onder optimale omstandigheden.
De indrukken zijn dieprood, complex en rijk. Met een aroma van zwarte bessen, pruimen, zwarte peper en vijgen is de smaak van de wijn complex te noemen. Dit leidt tot een afdronk, waarbij de zachte toon van het fruit lang blijft hangen.
