Parelcouscous of liever gezegd: "Fregola." op Sardinië vind je deze fregolaversie meestal in bouillon-achtige soepen met groenten en / of schaaldieren. Op Sardinië gebruikt la mama voor dat laatste het liefst arselle, of vongole kleine schelpjes waarvan het eigen vocht, gecombineerd met een scheut witte wijn en wat knoflook een overheerlijke diepe smaak van de zee geeft. Maar natuurlijk kun je fregola als iedere andere pastasoort gebruiken. Al dente gekookte fregola is afgekoeld een prachtige basis voor salades lekker met mozzarella, tomaatjes en basilicum!
