A smooth blend of ripe Jonagold, with a splash of funk and a hint of smoke in the finish; sweetened with Pilton's classic bittersweet 'keeved' cider. Created on a 1935 typewriter, the signature text-only label depicts the exploits of the swift brown fox and the lazy dog as they sip cider and hang out at the cat's bar. Martin Berkeley, maker of Pilton cider, is a master of 'keeving'; an artisanal method that allows the maker to retain some of the natural sweetness in a cider. This old technique still requires a lot of knowledge and skill today. In its simplest definition, "keeving" is a traditional fermentation method used to produce sparkling, semi-dry, and sweet ciders without the addition of additional sugars. For its ciders, Berkeley uses the bittersweet cider apples that grow in traditional orchards around Pilton's parish.
