Sichuan-peper (of Sechuan) ontleent zijn naam aan een regio in centraal China waar hij al eeuwenlang traditioneel wordt verbouwd. Deze zeer geurige bes heeft een licht verdovende eigenschap die het gehemelte enigszins verdooft, voordat hij zijn peperige, discreet citroenachtige en houtachtige smaak afgeeft. Het maakt deel uit van de samenstelling van de beroemde vijfkruidenmix.
Sichuan-peper past perfect bij vlees- en gevogeltegerechten en bij zetmeelrijke gerechten, maar kan ook worden gebruikt om salades of desserts op smaak te brengen, vooral die met chocolade.
