Amazake is het beste te omschrijven als natuurlijk (Japans) zoetmiddel, maar het is ook geschikt om melk of boter in een gerecht mee te vervangen. Heel bijzonder, want amazake bestaat eigenlijk alleen uit gefermenteerde rijst, koji (een unieke Japanse fermentatie-starter) en water. Door een uitgebreid fermentatieproces ontstaat een zoete, dikke, romige crème. Ideaal om je baksels zoet (en veganistisch) te maken, op pannenkoeken of door je ontbijt of smoothie te doen.
