Deze Soave Classico van Balestri Valda heeft een strogele kleur en uitgesproken aroma’s van citrusfruit, witte perzik en bloemen. In de afdronk een licht amandelbittertje. Heerlijk als aperitief en te combineren met diverse visgerechten, zachte pasta's, mozzarella, salade caprese, salades met kip en asperges.
Balestri Valda is een familiebedrijf dat werd opgericht door Guido Rizzotto in de heuvels rondom de stad Soave. De garganega druiven komen van wijngaarden op 110 tot 170 meter boven zeespiegel. De bodems bestaan uit klei, vulkanische kalk en basalt en de druivenstokken zijn gemiddeld 25 jaar oud. Nadat de druiven handmatig zijn geplukt worden ze bij aankomst in de wijnmakerij zorgvuldig geselecteerd. Ze ondergaan de alcoholische fermentatie in roestvrijstalen tanks, waar de wijn kan rusten en daarna gebotteld kan worden.
