1 plot de-stemmed and vinified in cement. 1 plot full carbonic maceration for 8-10 days. Assembled after fermentation, elevage for 6 months in cement vat. No fining, filtration. Syrah vines have recently removed from the property for re-plantation. Syrah is no longer accepted as an allowed variety under Gaillac AOC. This is the final vintage of this fascinating Southwestern Syrah. Structured with subtle animality notes of ripe black fruit, tar and undergrowth. Supple tannins and roundness make for a still youthful yet elegant Syrah. Quantities are very limited.
