Deze Vendimia Seleccionada van Bodegas Resalte de Peñafiel heeft geconcentreerde aroma’s en smaaktonen van zwarte kersen, bosbessen, bramen, cederhout, vanille en noten. Heerlijk te combineren met lamsvlees, entrecote, paella en Spaanse ham.
Bodegas Resalte de Peñafiel is opgericht in 2000 en beschikt over 80 hectare wijngaarden. Hier maken zij uitsluitend wijn van de tempranillo druif, die is aangeplant op wijngaarden met verschillende microklimaten, bodemsoorten en hoogten. De druiven voor Resalte Vendimia Seleccionada komen van speciaal geselecteerde wijngaarden op 1000 meter hoogte en worden handmatig geoogst wanneer ze de juiste rijpheid bereiken. Dit wordt nauwkeurig vastgesteld met behulp van analyses in een laboratorium. De druiven worden langzaam geperst door hun eigen zwaartekracht en het sap wordt 5 dagen gekoeld tot 8 graden. Daarna begint de alcoholische fermentatie. De wijn gaat 9 maanden in nieuwe grote Franse eikenhouten vaten waardoor het zijn primaire fruitkarakter behoudt en het hout subtiel integreert.
