Deze vintage sardines, gevangen voor de kust van Saint-Gilles-Croix-de-Vie in de Vendée, worden geselecteerd vanwege hun hoge vetgehalte van meer dan 12%. Deze traditie wordt sinds 2004 in stand gehouden, waarbij de sardines binnen enkele uren na de vangst met de hand worden bereid en ingemaakt. Dit recept is vooral een sardine om te laten rijpen, waarbij de sardines elke zes maanden worden omgedraaid om ze zachter te laten worden en hun heerlijke aroma's te versterken.
Maagd Perle wiegt haar zoon Ulysse teder in een omhelzing vol tederheid en moederliefde. Een creatie van Delphine Cossais ter verbetering van onze 20e vintage, de vintage van 2024. Een verfijnde omgeving waar de sardines delicaat worden gedrenkt in extra vierge olie.
