Balsama bianco is iets zachter van smaak dan balsamico azijn. Ook is hij minder stroperig. Deze azijnsoort wordt van de druivenmost van Trebbiano druiven gemaakt. Daar krijgt hij zijn unieke smaak van. Tijdens het proces worden de druivenschillen er snel uitgezeefd. Hierdoor blijft hij licht van kleur. Deze variant rijpt 4 jaar in houten vaten. Zo wordt de azijn heerlijk van smaak. Hij is lekker over gegrilde groente, vis, vlees, komkommersalade of verse aardbeien.
