De Pandan rijst is afkomstig uit de regio Preah Vihear in het noorden van Cambodja, waar voornamelijk vrouwen in coöperaties onze Jasmijn rijst verbouwen. Naast rijst verbouwen ze ook cassave, cashewnoten en ook sojabonen. Vanuit het noorden van Cambodja word deze rijst vervoerd om gepeld en verwerkt te worden in Batambang. De witte lange korrel van witte pandanrijst is geslepen en gepolijst. Daarom is de smaakwat milder maar behoudt zijn zachte, volle smaak. Om die reden is het goed te combineren met pittige gerechten. Gebruik ongeveer 75 g per persoon. Voeg 1,75 keer de hoeveelheid water toe. Breng aan de kook en laat 40 minuten zachtjes doorkoken.
