Djeruk Purut, ook wel bekend als gedroogde limoenblaadjes, wordt veel gebruikt in de Oosterse keuken en heeft een frisse geur en fruitachtige citroen smaak. Citroenblad is lekker in kip-, visgerechten, hete soep, stoofschotels en sauzen.
Hoe te gebruiken? Voeg limoenblaadjes toe aan de gerechten. In zijn algemeenheid worden de blaadjes opgegeten maar voor het opdienen verwijderd. Voor sommige gerechten zoals Thaise tod mun (vis cakejes) of panang (rode curry) worden de blaadjes in fijne reepjes gesneden en eet je ze wel mee op. Je kan kan reepjes kaffir blad ook over curry's, salades of soepen strooien als garnering. Limoenblaadjes zijn ook lekker in zoete bereidingen zoals ijs, soufflés en cake.
