Description
Derrumbes San Luis Potosí is een unieke mezcal afkomstig uit de centrale staat San Luis Potosí, waar het droge klimaat en kalkrijke bodem zorgen voor uitgesproken aroma’s. Deze mezcal wordt gemaakt van de wilde Agave Salmiana, een soort die veel groter is dan andere agaves en daardoor ook vier keer zoveel plantmateriaal vereist per fles mezcal. Dankzij het gebruik van bovengrondse ovens (hornos) mist deze mezcal de klassieke rokerigheid, wat zorgt voor een bijzonder helder en aromatisch profiel.
Productieproces
- Agavesoort: 100% wilde Agave salmiana, geoogst na 10–12 jaar
- Koken: In bovengrondse steenovens (hornos), zonder gebruik van houtrook
- Malen: Mechanisch met een trapiche (horizontale molen)
- Fermentatie: Open lucht, in houten vaten met natuurlijke gisten
- Distillatie: Tweemaal in koperen ketels
- Rijping: Minimaal 60 dagen rust in glazen vaten
Smaakprofiel
- Neus: Groene aroma’s van vers gras, jalapeño en zachte kruiden
- Smaak: Licht floraal, met uitgesproken mineraliteit en tonen van citrus en selderij
- Afdronk: Fris en droog met een zweem van honing en gedroogde abrikoos
