De Valpolicella wordt ook wel de Beaujolais van Italië genoemd. De wijn heeft beperkt tannines en is daarom licht van karakter. Bij de Ripasso echter volgt na de eerste gisting een tweede gisting met de pulp, die overblijft bij de productie van de Amarone wijnen. Hierdoor wint de wijn enorm aan smaak en structuur. Bovendien heeft de helft van de wijn ook nog 8 maanden gerijpt op hout. Het resultaat is een volle, geconcentreerde wijn, die desondanks fris, zacht en toegankelijk blijft. Een echte aanrader!
Deze wijn is gemaakt van de druiven Corvina, Corvinone en Rondinella.
