Description
De Bacanora Cielo Rojo is een agave spirit gemaakt van Silvestre Maguey agave en is geproduceerd in het berggebied Rio Sonora-Sierra Madre in Bacanora, Mexico.
De Silvestre agave pinas (hart van agave) worden 36 uur ondergronds gekookt en vervolgens 8 tot 10 dagen gefermenteerd met wilde gisten in roestvrijstalen vaten. Vervolgens tweemaal gedistilleerd in roestvrijstalen potten. Deze zeldzame Silvestre Maguey Agave-spirit wordt in beperkte kleine batches gemaakt op een rustieke familieranchero, net als het vier eeuwen geleden ook werd bereid in Noord-Sonora, Mexico.
Deze Bacanora is erg soepel met rokerige hinten van de gekookte agave, licht rubber- en zoete grasachtige smaken met boterachtige en romige tonen. De afdronk is niet al te lang met een licht kruidige en grasachtige hint.
