Description
Derrumbes Oaxaca is een ambachtelijke mezcal afkomstig uit de beroemde staat Oaxaca, het hart van de Mexicaanse mezcalproductie. Deze expressie is bijzonder doordat het een blend is van twee agavesoorten: de veelgebruikte Espadín (Agave angustifolia) en de zeldzamere Tobalá (Agave potatorum). Door deze combinatie ontstaat een mezcal met zowel herkenbare als gelaagde smaken, die de rijke biodiversiteit en mezcaltraditie van de regio weerspiegelt. De productie vindt plaats onder leiding van Maestro Mezcalero Justino García Cruz in het dorp San Agustín Amatengo, waar men uitsluitend met traditionele methodes werkt.
Productieproces
- Agavesoorten: Espadín (cultivar) & Tobalá (wild)
- Koken: Ondergronds in een conische stenen kuil (horno), gestookt met lokaal zwart eikenhout
- Malen: Traditioneel met tahona (grote molensteen getrokken door ezel)
- Fermentatie: Spontaan in open houten kuipen met wilde gisten uit de omgeving
- Distillatie: Dubbele distillatie in koperen alambieken
- Rijping: Minimaal 60 dagen rust in glas voor een gebalanceerd resultaat
Smaakprofiel
- Neus: Geurige tonen van rijpe steenvruchten, geroosterd hout en wilde bloemen. Licht rokerige accenten verweven met hints van banaan en citrusolie.
- Smaak: Elegant en evenwichtig, met frisse tonen van limoen, groene appel en komkommer. Zoetige ondertonen van honing en snoepgoed worden aangevuld met kruidigheid en een subtiele rooksensatie.
- Afdronk: Zacht, romig en fris, met een lichte rokerige toon en een verrassend minerale afdronk die lang blijft hangen.
