Description
Derrumbes Zacatecas is een traditionele mezcal afkomstig uit Huitzila, een dorp in de staat Zacatecas dat grenst aan de Tequila-regio. Terwijl veel producenten in dit gebied overstappen op tequila-achtige dranken, blijft de familie Bañuelos trouw aan het ambacht van mezcal, gemaakt volgens oude methoden. Voor deze mezcal wordt uitsluitend gebruikgemaakt van de blauwe agave (Agave tequilana Weber), wat zorgt voor een herkenbaar maar uniek smaakprofiel.

Koken: Ondergronds in een stenen kuiloven met lokaal hout
Malen: Mechanisch met tahona
Fermentatie: Spontaan in houten kuipen
Distillatie: Dubbele distillatie in koperen ketels
Rijping: Minimaal 60 dagen rust in glas
Smaakprofiel
Neus: Warme aroma’s van kaneel, cacao en geroosterde noten, met een hint van vers gras.
Smaak: Aards en mineraal, met tonen van olijven, kruiden en een lichte fruitigheid.
Afdronk: Licht rokerig en gebalanceerd, met een aanhoudende kruidige frisheid.
