Deze Special Edition Lot 07 heeft een oplage van 5040 flessen, nog maar enkele flessen beschikbaar bij Cane & Grain.
Voor de Ilegal Joven Special Edition mezcal wordt alleen ambachtelijke Espadin-agave gebruikt, die wordt geroosterd met mesquite- en eucalyptushout. Nadat de agave is geroosterd, wordt deze geplet en gefermenteerd in eikenhouten vaten. Vervolgens wordt de mezcal tweemaal gedestilleerd in kleine koperen ketels. Joven betekent dat de mezcal niet gerijpt is.
De mezcal heeft diepe aroma's van gekookte agave, citrus, rode chili peper en groene appel. Deze krachtig smakende mezcal heeft een licht rokerige afdronk.
In de begin van deze eeuw bracht John Rexer, de oprichter van het merk, ‘’merkloze’’ mezcal uit heel de streek Oaxaca mee naar zijn eigen bar in Antigua, Guatemala. Binnen korte tijd werd het erg populair en in 2006 startte hij zijn eigen merk mezcal. De bedoeling van het merk was niet anders dan voorheen en dat was in de eerste plaats zijn eigen bar te bevoorraden. Daarom vindt u op de achterkant van elke fles de tekst: Oorspronkelijk geproduceerd voor Café No Sé.
