Helder licht goudgeel van kleur. In de neus aroma’s van citrusfruit, gekonfijte ananas, wilde bloemen, honing, anijs en geroosterde sesamzaadjes. In het smaakpalet tonen van groene citroen, mandarijn, Turks fruit, brioche en vanille, die worden gevolgd door een levendige afdronk met mooie zuren.vinificatie
Na de handmatige pluk worden de druiven geselecteerd en pneumatisch geperst waarna het sap 12 uur lang rust om grovere bestanddelen te laten bezinken. Hierna volgt een temperatuur gecontroleerde alcoholische fermentatie met wilde (druifeigen) gisten. Aansluitend vindt de malolactische gisting en rijping op de lies plaats. Dit gebeurt in eerste klas eikenhouten barriques die voor 50% nieuw en voor 50% een jaar oud zijn. Na 12 maanden wordt de wijn geassembleerd, geklaard, eventueel licht gefilterd en gebotteld. Dit hele proces verloopt grotendeels volgens biologische en/of biologisch dynamische regels en voorschriften. ‹›Related Products
