Een Grand Chardonnay van de jonge en zeer getalenteerde wijnmaakster Edwige Thuillé. Haar roots liggen in de Borugogne en dat proef je. Expressief op de neus met geuren die doen denken aan rijpe perziken en peren, elegant verpakt in romige minerale aroma's van de opvoeding op 'lies' en heel subtiele houttonen. De ’s nachts geoogste trossen uit de beste percelen worden volledig ontsteeld, waarna de druiven gekneusd worden en een koude inweking op schillen ondergaan voor de gisting (meer aroma’s). De vinificatie vindt plaats deels in RVS tanks en deels in barriques van Frans eikenhout (15% nieuw, de rest 1-3 jaar oud). Het deel in de RVS tanks ondergaat geen malolactische gisting, dat in de barriques wel. De opvoeding op eigen ‘lies’ (fijn bezinksel) duurt 7 maanden en wordt net als de gisting 50% in RVS en 50% in dezelfde barriques ondergaan. Voor het bottelen wordt de jonge wijn nog deels geklaard en licht gefilterd op kiezelsteen filters (kieselguhr). De assemblage kan per oogstjaar variëren, 50-60% barrique en 40-50% RVS wijnen. ‹›Related Products
